osx: convert from binary NIB to XML-based XIB

Directory-based NIB is an old binary format and XIB is preferred
these days as it is XML-based and friendlier to source control
systems like git. Xcode 26 won't even load the old NIB anymore,
so I used ibtool to upgrade and convert it manually.
