Related tdf#78486: fix wrong formula parsing because we onlyHEADmaster

used quotes ('') for field names with whitespace. Better to use
quotes - like 'FieldA' - always to prevent any formula compilation
miscalculation.

Also handle single quotes inside field names by escaping them as ''
(doubled), matching MSO behavior. For example, a field named Fie'ldB'
is written as 'Fie''ldB''' in formulas.
